It's hard to fund studies of things where nothing happens but I believe this is the case with sodium sulfite solution in water in absence of air.
Keep the sodium sulfite solution in a full sealed container and I believe it will last for years.
If it is kept in a part full container under inert gas very little oxygen from the air should get in and it will last a long time.
If the sodium sulfite solution is exposed to air in a part filled container it will react with oxygen from the air to form sodium sulfate.
I have not run tests on the sulfite alone but my Xtol in sealed bottles lasted till it was used up at 22 months.

I too keep my XTol in completely filled bottles (that is I mix the stock, for 35mm in a Patterson I need 150 ml Xtol for 1+1, I pour 150 ml stock in a 200 ml bottle and top it off to the brim with distilled water and close it. If I need to process I pour the solution in a graduate and fill up until 300ml..keeps my stocks running for more than 2 years).

Perhaps something similar can be set up for Instant Mytol, with the needed amount of stock plus the needed amount Sulphite in solution, and top off with distilled water in a small bottle..
