Yikes, that's bad Eddie! I've never seen anything of the sort, although I tend to use slavich papers and I rarely do ten at a time. There's probably a lot of variation between papers...
If you are seeing changes over 10-15 minutes when working up a batch of ten prints then perhaps your developer is exhausting. Please also be careful to keep exposed papers in complete darkness after exposure- a typical enlarger has a lot of light leaks, plus the light reflected off the paper...
Yes there's plenty. As mentioned, definitely look at japan exposures for 5x7 provia and all the others. Shipping is not outrageous and I am always happy to share orders.
I had a back made so that I could do one cut of 8x10... plenty of things available in 8x10 but not 5x7....
Thanks. The clay is, as far as I know, kaolin. I guess they bind it and deposit kaolin powder on the board and then sand it to a very smooth finish. In person, it looks like unglazed porcelain. I will probably put sandarac or something over it after it's toned.

This is quite bizarre what I made, I must say. I keep looking at it trying to figure out why it seems so much more three dimensional than my paper prints of the same neg (granted those are on fairly textured kozo). Perhaps...
I think of acutance as the derivative (slope) of negative density across a sharp boundary that should reach theoretically DMax on one side and DMin on the other side of the boundary. So you put a sharp edge (knife) on the film, expose, develop, and see what you get. If everything were perfect...
I have had good results from the $500-600 mamiya 645 500mm f/5.6 lens on my Nikon bodies. It's not much bigger than a comparable 35mm lens. Manual focus though, of course.

This may at first sound like a very odd suggestion but have a look at the Nikkor 360T. It has a fairly gentle rendering, good neutrality, nice bokeh with a little bit of swirl, and the short bellows draw makes it easy to use in tight spots. (there was a url link here which no longer exists)...
