It all breaks down with 35mm film however. The results fall off dramatically.

What? A 1cm square of 35mm film is the same as a 1cm square of 120. 120 just has more of those squares.

With 35mm things tend to be softer with the v700. But with medium format, I remember scanning Rollei 80S with an amazing sharpness and amount of details. I could have easily made a 80cm large print, it would still have looked very sharp and constrasty.

As said before, the issue for me is more with color films. More than pure resolution, to get the most accurate et deepest colors from films (especially slides) is my main concern

The resolution that a V700 can do isnt enough to properly enlarge a 35mm scan. It looks much much worse. Totally unacceptable to my eyes.

Why not just use a digi cam? Bonus is it is also a camera...

Noblex 135 Sport, Fuji C200, D850 scan.

Easy to scan medium/large format film too. Just use a copy stand and a light pad:

Fuji GW690III, Fuji NPS 160, D850 scan

Rolleiflex MX-VS 3.5, Kodak Portra VC160, D750 scan

The Epson V-series scanners are very poor for scanning small formats such as 35mm and 6x4.5. In most regards a 35mm straight contact sheet is the limit of fussing around.
The quality picks up a bit more in larger formats like 6x6 and up to 8x10, but it must be remembered these scanners are for the consumer market and do rely on an extant base of skill to wrangle the best they are capable of (which is modest). If you want a comparison of quality, compare a V-series scan to that from a Hasselblad Flextight.
