I have a Epson V600 which I have been using successfully for several years, mostly scanning old phots and some negatives and slides. I usually place between 2 and 6 photos of various sizes, preview, in thumbnail mode, reorient photos that require it and scan. A few days ago I suddenly was unable to scan multiple photos. The scanner itself appears to go through the scanning process of all photos (1 of n, 2 of n, etc.), but only 1 scanned photo appears in the the target directory. I reinstalled my scanner software, made sure that all options were reset, but nothing seems to work. Any suggestions?

Maybe try without reorienting (do at a later post scan). Check if there are updates.

Not orienting makes no difference

If you do not want all images saved into one file, then you shouldn't use "Multi-TIFF" format.
