In that spirit - if I were to settle on two Black and white films they would be either FP4+ or Plus-X and Tri-X. I prefer Tri-X to HP5 for the extra speed when developed in Diafine, which is what I use to push. For most other developing I use Rodinal, or R-09. I usually recommend the same combination to people who ask. While I use TMax, I have yet to warm up to it, and will probably switch to FP4+ when I run out, partly because I use it for LF.

I'm actually impressed by Markok's inputs so far - had him pegged for late teens at first. Wish I had had the internet and fora like this at his age.
 
I'm easy. I use Tri-x and FP4+ exclusively. I've tried most of the others, but always came back to these 2, so I've stopped looking around. Xtol for 35mm and Pyrocat for everything else. They do everything I need.

i use whatever film i happen to have on hand.
right now i have about 10 different kinds of film on hand
(color and black and white) ...
 
I used to use the old FP4 many years ago. Then Fred Picker recommended Tri-X. Now I use it exclusively with Pyrocat-HD for both the 5x7 and the 8x10.

I use only ILFORD Photo films.....but then again I would....

I do like DELTA 100 especially for portrait work, but at 400 its HP5+ ( I like a discernable grain ) and I am actually falling just a little bit in love with DELTA 3200
it just has a look that I like, prints very well, and I am using it more and more, for just about everything.

ILFORD products quality assured at a price you can afford.

My local supplier has a huge stock of Ilford products at very competitive prices. I can't buy B&W film cheaper than Ilfords unless it is out of, or very close to being out of date stock. I do look for fuji acros when the price is right and all my colour film is fuji. On top of that I am ENGLISH so I try and support UK products which are now very thin on the ground. We have very little in the way of manufacturing industry now, the far east has taken the market in just about everything I can think of.

This is a good question and I shoot some very different films from most of what has been listed here. I guess in the end you'll probably find most films represented in a list like this but how about these offerings (some weird ones):

30x40cm agfa aviphot 200
30x40cm Russian film (if you can read russian I'll let you translate the box!)
8x10 tmax 100 (most frequently used film)
8x10 efke 25
8x10 Kodak SR45

For 4x5 color I shoot provia and nps or 160 pro. For 120 I shoot whatever I have and that includes just about any film you can think of. I've recently received a large stash of 120 film for dig converts and I hope to shoot all of it at some point. These include reala, provia, velveeta, ektachrome, impresa, etc etc.

Provia for landscapes or anything to be scanned for web use

Neopan 100, 400, 1600 and a bit of Acros.

I have extensively used FP4+ & FP5+ but at the moment I've switched to the Fuji lineup.

I find the Neopan 400 at 320 and the 1600 at 800 in D76 1+1 to be a very nice and easy arrangement, especially as the 400 & 1600 films have the same developing times.

For colour I use Reala with a little bit of Kodak normal contrast 160.

I buy all of the film in bulk rolls, except for Reala.

All 35mm:
Pan F, FP4 & HP5 for B/W
K64 or Sensia 100 for slides
Konica Centuria for colour prints, although any film is rather too much at the mercy of the processing labs to be too emphatic about it!

I find it hard to jump around from film to film. So I stick with just a few. I use a lot of Hp5. Delta 3200 when I want to shoot low light, and recently have tried TXP320, mainly because I can get it in 220 format. 90% of my shooting is with Hp5!
 
In the past, I've tended to be a bit of a film butterfly. However, I suggest starting with one film (say TX or FP4+) and then getting to know it before you try others. Maybe every time you buy more film, buy at least one thing you haven't tried before-that way you have the familiar to fall back on but you also expand your knowledge of what else is out there.
Anyway, to return to the question:

35mm-don't do much 35mm b&w these days, but usually either APX400 or Neopan 400 (what I have in my bulk loader)

120- XP2, APX 400 for portraits while stocks last (then probably HP5 +), Delta 3200. Might add Pan F/ADOX 25.

LF-HP5+ or Classic Pan. Also love Type 55.
 
Tri-X 400 (35mm, MF, and 4x5)
FP4+ (35mm, MF, and 4x5)
TMX (MF, because it was DIRT CHEAP)

Then I have an assortment of the odd Agfa roll, I'm trying some Arista 4x5 film, and there are a couple of unopened boxes of Tri-X 320. I used to fart around with a bunch of different films, but found the hunt for the 'perfect film' limiting more than anything. When I run out of Tri-X I'll probably convert to HP-5 to support Ilford. I like HP5.

For color work, I use Superia 100 / 200 for 35mm, Kodak E200 / Fuji Provia 400 for MF, and Agfa RSX-100 for 4x5 (2 boxes left).
 
At the moment it's two: Efke on bulk rolls in 35 mm and Neopan 400 in MF. Souped in what I have left of Rodinal. Will probably use Calbe R09 in the not too far off future unless someone starts stocking Rodinal again in Sweden.

If I try to put any other B&W film in any of my cameras, they will leap off of the tripod.
 
Tri-X Professional for 4x5 and Ilford Pan F for 35mm. One developer for each, both films tested for Zone I, development tested for Zone VI (N and N+1), and everything kept consistent. I prefer to keep it simple, mechanize as much of the process as possible, and concentrate my efforts and energy on subject and composition. Find what works and settle on it!

At a given moment.. at this time of year.. if B&W and rollfilm then its probably APX-100 in the camera.. and colour its split between Pro800z and Reala.. Colour in a 35mm camera (including all the little P&S thingees of my kids) is typically Vista 200--- with over 60 films to go and the stuff still cheap in the shops (this week at the drugstores its 3 Packs for 2,50 EURO). B&W and 35mm.. right now I'm shooting with KB50 and HP5.. but last week it was FP4... and next week probably APX-100 and maybe even APX-400.. or maybe if the sun comes out.. Copex..
 
I've got in sheet film - ADOX 50, Velvia 50, HP-5, and in 120 - Delta 100, Delta 400, thanks to the lovely guys at Ilford last week! I've got a small amount of 35mm Delta 400 too...
