I tried to order a 5 pack of Ektar 100 for 120 from Adorama yesterday. The website said "in stock" but I got an email from them today saying that it is back ordered 10-14 days. Today the website says "wish listed" for both the pro-pack of 5 rolls and individual rolls. B&H has individual rolls "in stock".

With high demand items, frequent delivery and dispatch times mean that items can come in one door of the warehouse, be packaged, and out of another door within a couple of hours, so real time inventory on the website is often not possible.
Unless the items actually hit the shelves, our computer system generates an automatic message in response to an order, indicating that it is out of stock.
In the scenario you describe, you saw an in-stock indication, because a shipment was expected into the warehouse within the next 24 hours - but because it hadn't hit the shelves, our computer sent the message stating that the film was back-ordered.
We are expecting a further delivery into the warehouse, by the end of this week.
