I found this mucho verboso chain very informative. I only used an acid stop bath when I started bw work just over 60 years ago, and I think I will continue to do so for film. But pe's cogent arguments for using it with both paper and plasticized print material has convinced me to buy some for prints. As far as film goes, I use water BECAUSE it does not stop developement immediatly. It, in my somewhat limited experience, allows the shadows to come up a little bit more while in the highlights exhausted developer faster diluted.
