what does the number 120 stand for in regards to 120 film?

120 is just a size kodak asigned for that size of film.

Since each frame of a 120 roll is 6 cm square and 6 x 12 = 72, you're a trifle short of 120mm per roll.

Nice theory, but...

They're just names. If Kodak had used letters, everyone would have wanted to know what the acronym was for (and made it up if they didn't get an answer). So they used numbers instead. Then everyone can wonder what the numbers mean, and make it up when they don't get an answer
