I would recommend going with roll film, especially if you are new to the IR film. Reason is that you will want to bracket.. a lot. At least until you get to know how each film behaves and what sort of filtering is optimal for the look you want. In my own work with various IR films, I've found...

Scan to 8 bit b&w, 300 dpi should be fine. Heck you really don't even need 8 bit.
For really high res output you can have an LVT made, but probably a decent inkjet can handle the resolution you need.

Yes well unfortunately the resolution wankers got the better of Kodak's marketing strategy and as a result we have several rather sterile films... just my own inconsequential opinion, of course, and I am aware that some people feel that they can make tmax sing.

Let me suggest Ilford FP4+. You might find it closer in feel to PX than tmax.
