It is mainly not a contest, but I think of something like Worldwide Pinhole Photography Day as an example of an event that is intended to inspire one to take photos.
Our city stages an Earth Day photo contest each year, and invites entries that are consistent with that year's theme. While it is true that one can submit old work, I'm sure that many of the submissions are created in response to the the contest.

So in answer to the question raised by the thread: "There are an infinite number of contest possibilities, and a surfeit of reasons for participating.
