Wow, I can't believe Bruce Gilden didn't even receive mention. He's not for everyone, but he's mastered the style in which he works.
I studied with a few photographers that I would describe as masters of street photography, Bill Gedney, Paul McDonough, and Phil Perkis. Less well known, but excellent work, give them a google.

I've known about William Gedney for a while now. You are right - an absolute master, and his stuff deserves a much wider audience. Here's a couple of links to some of his work:

I'm very partial to Fan Ho who caught a now long-gone Hong Kong arguably better than anyone. His Hong Kong Yesterday is marvelous.
