I'm setting up my darkroom in the new place after too many years of it being in storage. What Rosco red filter gels are folks using for safelights?

I'm asking because my trusty safe Kodak beehive safelight was ruined in our flood of May 11th of 2022. I have a couple OC safelights, but I want to try some of the OC sensitive FOMA papers, just because.

What Rosco filter gels are others using in their generic 5x7 inch safelights?

You can use gel filters from Rosco. You'll want a red equivalent to a #25. But save yourself the trouble and use these light bulbs.

Low power, never fade, no paper fog. Easy.

I use a graphic arts product that the graphics people at work were throwing out, and I believe that it's called Rubylith. I have made tests, using the method outlined in th Kodak pamplet, "Is your safelight safe?", and it's fine with the Ilford paper I use.

I replaced to olive (for color paper) filters over the indicator lights in my Durst with Rosco #27 RED for B&W work. Not that it is the best "RED" but it is what I had laying around and it is safe.

Going the LED route is definitely a big upgrade as it will give you a lot more light than a regular bulb while remaining safe.

660 μm LED's are safe for pretty much every ortho B&W material.
