35mm B&W: recently stocked up on Kentmere 100 after testing a few rolls and liking the results.
35mm color: Fuji XTra 400 that I can pick up fresh from the local box store.

Yeah, I am cheap.

Color: any slide film. Don't think I've used a slide film that didn't have some quality I liked. Pick one? Would have to be Kodachrome.

B&W: always been partial to the Ilfords. Currently I'm experimenting with a bulk roll of Kentmere 400 and I'm really digging it.

Kodak TMax 400.

Every time I print it I'm amazed.

APX 100 in Rodinal 1+50 or Rodinal in general. But these days I'm biased to Fomapan 200 in Xtol.
