I notice that development time varies depending upon ambient temperature with the Fuji instant film. Do I need a thermometer to achieve good results? And if so, any recommendations on a robust but not too expensive one?

If in doubt, leave it longer. There is a terminator in the chemicals that stops development after the appropriate time. This is not so for Polaroid peel-aparts, AFAIK. only Fuji films have this neat feature.

brofkand is correct. Fuji films are 'self-terminating'. Just leave it a bit longer before peeling. Don't leave it 6 hours and you'll be fine.
