Now that I have had a mirrorless camera for almost a year, NIkon Z7ii. Now I am on a cruise to inside the Antarctic Circle I noticed that the visual brightness range of the mirrorless system is much less that an SLR. For example: Highlights in general are missing in the viewfinder. I noticed that in Buenos Aires at times, but once on the cruise the bright sunlit spots on icebergs or mountains do not show up in the viewfinder but are recovered in the downloaded images. I am finding that when I see highlights without the camera and I bring the camera up, I have to check several times that I have framed what I want because I cannot see the highlights in the view finder.
 
I have a Sony translucent mirror, S77II although there is a mirror the viewfinder is EVF. I don't seem to have your issue, my concern is that I'm not always sure if the colors I'm see in the viewfinder are accurate. Also there is a bit of lag time for the EVF to come on, and a short battery life. In general I will take one my older DSLR the A700 or A900.

I know @gary mulder has a Nikon Z-series (not sure whether it's a 7, let alone a 7ii) and when we were out photographing a few months ago, he ran into some odd color issues with his EVF. Turns out it was related to a setting. I suspect something similar is the case here and there's probably a way to adjust the EVF image characteristics to something that better suits your taste.

This sounds like a general EVF query rather than a model-specific one. And my experience to date is that EVFs can be tricky under very brightly sunlit conditions when one's eyes are adapted to the bright scene, but the EVF cannot match the brightness, so the EVF may appear dim and washed-out. And even if the technical limitations are solved, I don't expect full-brightness EVFs to become available because it's a lawsuit waiting to happen.

I work around the issue using histogram and / or clipping indicators.
