Is there a list of such MF cameras?

That is the best I could come up with for a contribution to your answer.

Is it safe to assume that all 645 SLR cameras (Mamiya, Z-B ETR/ETRSi, Pentax 645,...?) have this feature available?

No. Bronica ETR series does not. Some early Bronica 6x6 SLRs have an instant return mirror.

My Hasselblad 2000FCM. However, I choose not to use instant return, but rather to reset mirror when cocking. Just a personal preference. However, not a camera I would recommend buying since, as I understand, not repairable when it goes kaput. Bought mine new when camera introduced...but one never knows......

All hasselblad 200/2000 series cameras had instant return mirrors (but you cannot change the lens unless you cock/wind the shutter!)

Early Bronica D, S, S2's

All motor driven bodies (Hasselblad H, EL's, Pentax 645's, Rollei 6000's etc...)

All Pentax MF bodies

The EC and EC-TL did as well.

What I'm curious about--generally speaking it seems the cameras with instant return mirrors are also the cameras with focal plane shutters (Pentax 67, Pentax 645, Bronica S/S2/EC, Mamiya 645) , and the cameras without instant return mirrors are the cameras with leaf shutters in the lens (Hasselblad 500, Mamiya RB/RZ, Bronica SQ/ETR/GS). Is that always the case?

The Pentax 645 has, per Pentax specs, an instant return mirror, too.

Early Asahi Pentax 6x7, Pentax 6x7 (1969), Pentax 67 (1990) all have an instant return mirror that moves back and up, down and forward instantly.
