A colleague's dad used to be a combat photographer and he too wanted to see what his options were in scanning his dad's photos so I scanned a few for him. Just to give you a reference, this is a full res 2400dpi scan of a WWII 4X5 on a V700. I simply put it directly on the glass. Scanning at this setting - with no ICE, is relatively quick. I applied very little post work on this. Of course the V700 can scan a film as large as 8X10. An older model Epson V4990 can probably provide the same results and it too can scan a film up to an 8X10.

they are old but you might still be able to find one in great shape ..
look for a epson 4870 and you will be able to run it with vuescan no problem.
there is no 5x7 holder it only has holders for 120, 4x5 and 35mm, but you can easily
put the film on the glass or on mylar and the lid-light is big enough to scan whole plate ..
(I've been using mine since probably 2004? purchased refurbished / used from epson, and I've scanned 10s of thousands of thing)
