I think using an adapter is a good idea, since you're able to use more variety of fresh/more affordable 120 film in your 616 camera, and it'll be easier to get developed at any film lab. I have that same adapter to use in my Kodak Special 616 folding camera (which is currently being cla'ed & new bellows installed).
You can buy expired 616 film off ebay/various sites (prices will vary depending on where & when you look for rolls) & depending on the film could get something from it, but youd have to develop it yourself at home since nobody really develops 70mm film, last time I checked BlueMoonCamera did but at a high cost ($21 bucks to develop a roll).
If you buy expired 616 film online, you can reroll it with "not as expired" 70mm bulk film off ebay & reroll it, Film Photography Project does have some Kodak 500T in 65mm film that can also be used (they have a video on their youtube on how to do it)
