Cot320 has a smoother side, Stonehenge i didn't get to work so well for Kallitypes, sizing with arrowroot starch may improve the print, i haven't tried it tho

I don't use either of those papers but I buy my paper from Bostick and Sullivan and the paper comes packaged with an insert that says " coat this side". I make an inconspicuous pencil mark on the correct side and try to keep the paper in the original wrapping.
