After I scan a print and want to analyze the contrast etc in photoshop, should I do a levels adjustment to re-set the black and white points?

Thanks.

If you are useing CS3 I would reset the white and black points in curves. You will be able to see the histogram in the curve window and also do a better job at resetting the midtone density. I'd also do it in Lab and apply the changes to the l channel only.
