I'm looking for an app that will let me chose ISO / Aperture / Shutter speed and adjust the third value depending on existing light, but also flexible.

I have been using "Lux" for years, which I love. I can chose the ISO, then my preferred aperture, then it will tell me what shutter speed to shoot at.
However I have some very low ISO films (like 1-5 ISO) and I would also like to shoot more night photography which the app doesn't seem to be very good at.

Any suggestions for a better light-metering app?

my Lightmeter Pro has a minimum ISO of 3. The little Reveni shoe mount meter has a minimum of ISO 1.
