I have an Ilex paragon lens in an Ilex #3 Universal self-cocking shutter. I find that of my large collection of good-quality cable releases, only one has enough extension to actually fire the shutter correctly, others which are apparently identical just do not extend enough. Has anyone experience of this - is this normal or does the shutter need servicing?

I have an older Ilex which seems to suffer from the same. You might want to check the ummm..."depth" of the cable release. I find some have longer ones than others.

Old question. The standard answer is that the shutter needs to be serviced.

The mechanism that trips the shutter tends to migrate with time. Have it adjusted and you can use a normal cable release. Most people think you need a special cable release for the Ilex #5, but mine is in good repair, and I think almost any cable release I have works with it.
