I said "usually", but "frequently" would be a better choice.
I have a number of cameras that do not have built in meters or metering prisms. I also have a number of cameras (Olympus OM) that have excellent built in meters. In addition, I have a metering prism that I can use on two of my camera bodies (Mamiya 645). Finally, I have 4 usable hand meters (although two of them tend to be reserved for backup use). The two I use regularly are both Gossen meters - a Profisix, and a Digiflash.
I also agree with john - sunny 16 or just wing it are both available options.
When I do use a hand held meter, I tend to use it in incident mode. That may say something about my approach to the question.
I also like using flash meters, when circumstances permit.
I guess I am all over the place on this.
