Heh, funny you mention this I coded my own slit scan script in Matlab not so long ago - you can reslice the video information from any angle and animate the cutting plane over time (it can morph/do whatever a plane can do in Maya, which I use as the user interface) ...

http://vimeo.com/10945336 - the colour you see is the time dimension so if you see spectra you are literally 'watching the video sideways'
If you replace the video data with CT / MRI / PET scan imagery (DICOM) you can do the same tricks that radiologists get up to with scan reslicing - quite a lot of data can be re formatted as 'voxels' (volumetric pixels) and be effected in the same fashion. Quite a liberating way to see data actually, lots of interesting and unintuitive results (for me at least).
