The wash will still fluctuate wildly, but I imagine that's not too big a deal?

I deoends upon how much the temp fluctuates and the type of film you're using. PanF+ should be robust enough to withstand +/- 5 deg F. without reticulating if the temperature desn't go above 80 deg. F. Use the Ilford wash method instead. Fill a couple of gallon jugs with water and let the temp stabilize. No worries.
