Shy?
No relevant street photographer was shy at all... We can decide to be more or less seen, but we need to be there again and again and decide to do whatever every image asks us to do.

Is he a sidewalk photographer? Maybe a field photographer?
 
No cause for ridicule.
To my understanding he goes up to certain people, even seeks for them, takes his time, interacts with them, stares at them. Sets up his LF camera. The photos are staged to a certain extent.
This all does not fit to my understanding of street photography, a genre over here we do not even got a name for.

No offense meant. There is at least one long thread discussing and arguing about what is or is not street photography. The only conclusion I could come to is that there is no consensus. For example is there a difference between posing people or asking them to pose or even smile? All three of them are not candid photographs.
