epson v700 imac bit depth troubles

So my friend just got an epson v700 and I went over to scan some negatives. using both the epson software and the silverfast set to 24 bit color the files still ended up as 8 bit. I tried various things but had no luck. When I scanned a B and W image in 16 bit, it came up 16 bit. This is driving me crazy. What could be the problem?

Since color negs have three channels, 24 bit means 8 bit per channel. B&W, having only one channel, 16 bit is 16 bit, etc.

So 16x3=48 bit for color.
