Lots of photographers do this all the time. There are thousands of Minox users around the world. Their cameras make 8x11mm negatives. While they don't need to crop to do what you want to do, you can do what they do by cropping whatever size negative you have -- down to whatever smaller size you want.
The only thing left is what size print you want to make. Most Minox (8x11mm) users make "small" prints, like 8x10", but some make prints that are 3x4 FEET in size. You can too.
As pointed out above, all you need is a short focal length lens or a tall enlarger -- or both. With a 25mm enlarging lens four feet above the easel you can make four foot prints from an 8x11mm image or crop.
(If you DON'T have a short focal length enlarging lens, you can put a close-up filter on the enlarging lens, and it will make the focal length of the lens shorter! For example, a #10 diopter CU lens turns a 50mm lens into a 28mm lens.)
