Do you know if I could easily work with the 645 format with a 105mm or is it too much?

Depends. On a tallish enlarger, like a 23c or 4x5, it will do all but the largest enlargements. Generally, the 105 handles up to 6x9, however, when working with a variety of negatives, I use one like this. Usually though, if I pop a 35mm into my enlarger, I then switch to a 50mm. The main advantage of a 75 or 80 would be for maximum size or a short column enlarger. YMMV
