When ever I process my C-41 films, I tend to save up my exposed rolls until I have enough to use the chemistry up in a short period of time. I figure that this way, the chemistry is freshest and my results may be more consistent. It’s not a problem for me when using a quart/liter sized kit, as the stated capacity is 8 rolls.
I now have a 100’ of Kodak Vison 250D, which I’m a excited to try. I also have a ECN-2 kit from QWD. It is also a quart kit, but they claim a capacity of 15 rolls for the kit. That seems optimistic to me, but ok…
While shooting 8 rolls in a short period of time is not a big issue, waiting until I have 12-15 rolls of the 250D shot before I start developing is going to be hard. So, my question to anyone who might have experience with this kit - how long will it last, once mixed, if stored in full containers? Do I need to worry about the developer going south in a short period of time?
As I said, I usually use my C-41 chemistry up in a quick burst, so I have no reference points for keeping it (once mixed) for another month or so.

I believe, that you misinterpreted the instructions of this QWD kit, and your doubts about its capacity (as interpreted by you) are well founded. There are some companies now, which sell ECN-2 film spooled into 135 format cartridges, and I believe, that QWD meant these 135 format film rolls in their "number of films processed" data. You'd have to calculate the surface area of your 100' rolls and compare against the surface area of a 36 shot 135 film roll to get capacity for your use case.

In terms of shelf life: professionally made color negative developers (i.e. commercial C-41 or ECN-2 kits) have excellent working solution shelf life. Since many of these media are scanned after processing, there's a lot of leeway now. Even if ECN-2 was meant for processing in fresh tank solution with proper quality monitoring, these kits are aimed at amateurs with Cinestill rolls, so their shelf life should be many weeks.
