Just mixed up an Arista E6 kit and noticed that the colour developer is a dark purple, is this normal, can the set of chemistry still be used?
I followed the instructions.

I've never tried the Arista kit. All the E6 color developers I've used started out amber light color like a lager beer. I would try it. If you are really concerned call Freestyle. There's probably someone here who knows for sure.

I've used ancient Kodak E-1 kits that had a vivid purple hardener solution, but that was 40 years back.

The two-part color developer sold by Fuji-Hunt in their 5-liter E6 kit is also kind of purple when mixed. Parts A and B are essentially colorless on their own (maybe a slight straw color), but when mixed together with water to make the working solution, it all turns to a blue-periwinkle color.

Yes, at first. It's almost colourless after few minutes.
