i just bought one of these to
get started with my durst m800 enlarger (with 85mm Unicon condenser).

It seems good, however I have nothing to compare with and have never used enlargers before.

Is this lens any good compared to say the f4 80mm rodenstock or the 80mm el nikkor?, which I keep seeing recommended.

Also, Is this my lens a 6 element lens?

Very good lens, comparable to those you listed. I would keep it.

Yesit is and it is excellent in comparison with many other name-brand lenses.I rate it as good as the EL Nikkors

Yes it's a good lens, some of the Neonons were made by Pentax. I have a 50mm & and an 80mm and they are as good as my Componon S or Nikon lenses.

I have the Neonon 5.6/80 (and the Neonon 5.6/105) and a bunch of other 80mm lenses, eg El Nikkor, Minolta, Fujinon (75mm and 90mm), Computar dL, various Rodenstock and Schneider 80's and quite a few others. I've not yet directly compared them in a meaningful way however the little use I've given the Neonon suggests it's a very nice lens. I wouldn't loose sleep over the Neonons quality as it's also a 6 element/4 group lens, like virtually all the other excellent 80mm lenses.
