Is there hidden somewhere deep inside the guts of APUG a matrix or table of different developers and what they do. Not The Massive Dev Chart with times and such but what the differences are. What happens if I use Xtol instead of D-76? What can I expect from Pyro? I'm missing a simple matrix or table with info about pros and cons with various developers.

Not quite what you're looking for, but there is this - http://www.photomemorabilia.co.uk/Developer_Chemistry.html

If you want more info than that I'd hit up the Focal Encyclopaedia of Photography.

This was interesting. But how does it apply to modern developers?

Which developers are :
# If you want to emphasize minute detail — use a high-definition developer;
# To cope with extremes of contrast — use a compensating developer;
# To boost the contrast of a flat subject — use an energetic developer;
# For maximum economy — use a universal developer;
# If you want maximum quality in broad areas of even grey tone — use a fine grain developer;

Pyrocat HD seems to fit all those criteria extremely well, and so does Rodinal. varying the concentration to cope with extremes of contrast. Rodinal was a "Universal developer" Agfa recommended it for papers as well at one time.
