I used a piece of scrap Corian on one side of my sink, and some sanded exterior plywood protected with a few coats of polyurethane on the other. Primarily because these were materials I had on-hand, and it didn't need to be pretty, just functional. The corian is under my print washer and has some channels routed in it to direct water into the sink in case it overflows.
