I have been happily using xtol stock for about two months, replenishing so that my 1 gallon jug is full to the top, and I notice it is developing a kind of grayish color. It still works just fine, and my dedicated developer funnel has a fine screen in it, I use presoak when developing, so is this normal??

Yes, the color can also vary when film types are changed.
