Stepper motors are not smooth, you will need analog motor drive.

clock motor maybe--from an old analog clock. They are high torque geared down and made for timing. 1 revolution per minute--you control the shutter with the roller diameter then.
Another place to look for smallish pulleys, gears, and toothed belts - Old inkjet printers. They often contain small stepper motors that can be liberated for other purposes.
