Nice huh! That was the first alt process I tried when I got into large format photography. I tried beetroot, red onion, spinach and a few more things. They all worked, but beetroot was definitely the easier/more effective one. I don't think I saved the prints, but it was enough to get me interested in alt process printing!

How do you keep it from fading after you are done with it?

Keep it in the dark. Or scan it...

Yeah, it would be nice if you can fix it.

This would be a perfect magenta layer if doing a CMYK prints...

It took me forever to figure out this was a direct positive process. A lot of the earlier descriptions of the process make no real reference this fact.

Well, it's a pos-pos process, not really direct positive. It's a tad slow for that.

Aren't all anthotypes positive processes - UV bleaching of the dye responsible for the natural color so where there is no exposure, original color remains.
