This year I (finally) started shooting 8x10 negatives. Awesome! However how do I store them? Foor my smaller negatives I have those paper sleeves and I put them in a holder that is that. I don't have those sleeves for my 8x10 negs. How do you keep them tucked away? And where do you buy the materials?

I store my 8x10 the same way as my smaller formats, in sleeves.
Just get som 8x10 sleeves and they will fit in your usual binder (when you go for bigger sizes you will have a binder problem but not with 8x10)
Well sorted camera shops have 8x10 sleeves, and you can mail order them if your local store doesn't carry any.

Stay away from LDPE pages, etc., whether PrintFile or others. Not good for long term storage. See pages 485 through 500 here

Put negatives in these HDPE envelopes

and place those in this box


That's the best-value solution I've found. Note that one can write on the envelopes with a sharpie pen.

I use regular 8-1/2 X 11 sheet protectors (for documents) and study binders. It works great. I also put a contact proof print (or 8-1/2 X 11 digital print) next to the negative, as the next page after the sheet protector. My 8X10 negative collection is pretty small, but I do similar things for smaller negatives, and it works out quite well. Yes, you do get quite a collection of binders.

I put the negatives in polyurethane sleeves that accept hanging rods. Then I hang them in plastic file boxes like these:
