I edited your post and thread title slightly, because I'm sure you meant an Apple Watch, not iwatch.
I use an inexpensive knockoff of the Apple Watch, so I can't answer your question, but I know that with my watch, I have to take it off before loading film on to reels.

The normal behavior of the apple watch is to wake the display when you rotate or raise your wrist, or when you get an alert, like an incoming message. I don't think there's a way to mute the display (you can however mute the sound, which is something you'll want to learn how to do). You can turn it off, but I take it off when I put my hands in a changing bag, to be sure I don't forget.

As for wearing a TAG watch in a darkroom, I'd be more likely to wear something a lot more inexpensive instead!
You can but you have to use an Apple changing bag.
.... but I really don't want to take off a watch every time (which is nearly every day).
