...shooting and developing B&W film (medium & large format) instead of shooting color film and converting it to B&W?

I don't do my own printing. I scan the negs and send sRGB files to a lab.

What, if any, are the advantages of shooting B&W film vs color given the ability to convert B&W?
 
I think you would be better off asking this question over at DPUG instead. :smile:
 
Many of us stress over every little detail in shooting and processing so that we can get the result we want from our B&W film. If you feel shooting color film and lab processing meets your needs, then why not?
 
There have been several discussions of the advantages and disadvantages of shooting color over black and white film for scanning over on the LF Forum.
 
Do an experiment yourself. It is not easy to recreate the look of B&W film. If you are an expert in Photoshop, just about anything is possible though.
