This sheet film's dimensions are given as 2,25 x 3,25 inches, which converts to 5,7 x 8,25 cm.

Is this correct, and it is not a full 6cm wide?

Mainly asking because I really want it to be 6cm so the films could be put on a spiral for developing in a tank, like 120 film.

An alternative would be cutting the 6,5 x 9 cm sheets to the size you want.
 
Thank you for the suggestion. I should have mentioned in my post that I don't want to start cutting down sheets, having experimented already on some wasted 4x5 sheets, and being precise is too tricky. If it isn't exactly 6cm, threading it on a spiral goes awry.

how much film with 6cm do you need? If it is a somewhat bigger amount, and if you are willing to buy your stock of it for several years (or you make a group order with friends) we could do a special cutting run for you with 6cm. Or you cover our additional costs separately.
There are two possible options:
1. You order 100 packs at the price listed in the shop.
2. You order any number of packs you like, but pay the additional labour costs we have for making this special run for you. This additional labour cost is 250€.
 
I've just had a look at a Paterson adjustable spiral. Could drill a hole through the central part, including the column and insert a thin nut and bolt to make it a 57mm reel. Two pieces of wood used as spacers while drilling. Removing the nut and bolt has it back to normal.
 
There was a Jobo reel for 2.25x3.25, the 2518, but it was evidently sold in limited quantity and is now very hard to find.

Further to what John51 just posted, your best bet is likely to be modifying an existing reel so that it can be adjusted and locked to the width you need.
