I've searched Google, APUG, LF Forum, etc. and can't find any discussion on this film. Anyone have any experience with this???

Well Kodak stopped making it years ago. How far out of date is the stuff you have and how was it stored?
 
It expired in 2004. It was stored in a cool basement. It's not here yet. I know I'm rolling the dice but...curious to know what I might be in for if it's still good.

Well I have used Fresh Plus-x in 35mm, 120 and 4x5 size.
Kodak reformulated the film in about 2005. Here is the link to the data sheet for film of your age.

As for out of date Plus-X I recently got 20 rolls of 120 PX that expired in 2005. I have shot most of those rolls and they are fine. I rate it at EI 100 and develop in Xtol 1+1.

didn't know you were shooting 8x10. Funny how we always want more haha.

I used to shoot PX (the stuff with "Professional" on the label) in 35 and have been using it in 120 a bit lately but it has been awhile.
It's generally has a bite and is contrasty so you may want to tailor it to your scene.
If your batch has been stored reasonably well you should be fine and if there is bit of fog but it should be minimal.
2004 isn't long for a 125 b&w emulsion imo.
You could try HC110 if it does show fog.

I used D76 back in the day when I was learning on it. It shows a bit of grain if you are used to TMX but it depends on enlargement sizes.
If you are contact printing it will be beautiful.
