So far I have seen three different 75mm Biogons for LF; one on a Technika, a (larger?) military version, and the whopping big 3" mapping lens. Are there more, and other than the lack of a shutter, how does the military version differ from the 75mm on the Linhof?

Sorry, I can't answer that one but would like to know myself. In addition to Kornelius Fleischer as mentioned by David, J.P. Mose, who can be found on the lfphoto.info forum, knows a lot about Zeiss Oberkochen lenses.
