Does anyone out there know where one can get 6x9cm B&W sheet film, maybe out of Europe somewhere? Is there such a thing as a sheet film cutter to cut down 4x5" sheet film to 6x9cm? I'm fine using 120 roll film with my super Technica but it would be nice to do some individual shots sometimes.

You can get old expired one from ebay rather easily, but perhaps not cheaply.
OK, good, So one direct & fresh choice is the Adox CHS II 100 and that is the ONLY choice off the shelf. Expired is available any day from old (really old) stock whoever may have it for sale.Yes, I have 6x9sheet film holders. In the US we specify the full sheet size. European sheet film lists something repated to the ent image size. See the link I posted. 2-1/4 x 3-1/2 should be pretty close to 6x9 but maybe might need to be trimmed for length I suspect. Generally sheet film is 6-1/2x9 cm while roll film is 6x9 cm, but there may be other sizes. or 6-1/2x9 cm is a different size, but larger, so might be maskable.There is ADOX at Freestyle BUT in 2.25 x 3.25 size which smaller than even 6x9. I checked ADOX and they indeed make it that way for apparently US market.

ADOX makes sheet film in those 2 sizes and I merely quoted what Freestyle offers adding actual 6.5 x9 is offered as well but not by Freestyle. Can get it direct from Fotoimpex to anywhere in the World too.Curses. 6 x 9 is a poor metric approximation to 2.25 inches 3.25 inches. I myself typically use "6x9" in any case, as the respective cameras typically were called over here "6x9" (even Linhof up to about 1960 had it about 6x9 for both camera and sheet film cassette). And these format sizs are nominal anyway.
