I can't give you much of an advice on the wide lenses, but if I were you, I'd stick with the safer bets, i.e. the 150SW or 121SA, rather than the Metrogon. Wide angles have, as has been said in earlier posts, come a long way since the 30s. The less wide you go, the less trouble you may have with fall-off due to the cos^4.
As for films, if you're doing 120 - if you can stand the look of the t-grain films, Tmax 100 has good reciprocity failure characteristics compared to the older style films such as Pan-F and it's really fine grained. It works well in Tmax RS and D76. I only have experience with T-max, but another good choice from a reprocity failure stand-point could be Fuji Acros, which works up to 120 seconds without any reciprocity failure, according to Fujis own literature. Acros is also a T-grain film. Both of these films are available in 8x10 size.
