But I also decided not to cut down my 5x7 E6 on 4x5 because I found out this is a possible mortal sin.
To cut down 8x10 could cause same consequences...

Plus, you can leave as the waste strip the part with notches, expose it under a negative, develop and have a neat bookmark. There's no downside.

Do not waste the film, just buy and 8"x10" camera. What would you do if the only size available was 11"x14" or 16"x20"?

Why would it be a waste? Sure, cutting an 8x10 sheet in half gives 5x8 (and I think Chamonix or someone makes or made a camera and holders in that size for just that reason) and you waste a one inch strip but that seems very minor.
If I wanted 5x7 color that's how I'd get it. I'm just content to shoot B&W in LF and go to MF for color.
8 x 10 is on a big list of discontinue plans ( in color )
