in addition to the tele raptars i have suggested
i might also suggest the OP look for
a 6" ilex seminat, or a portrait veritar ( 10" )
or harvest shuttered lenses off of big old
122 format folders like a kodak autographic 3a
all will work great on a press camera like a speed graphic.

Will this lens provide full coverage of a 4" x 5" image circle, wide-open at infinity? I ask because I've heard it is designed for 2.25" x 3.25" cameras.

I've never used it anywhere near infinity. At portrait distances it provides quite limited movements.

Please remember that at close distances, your lens will be extended considerably more than would be normal for a smaller format.
A head shot will be about 1:2.5 magnification!
For that you will need about 40% more belows draw that at infinity and 1 extra stop exposure compensation. That is like using a macro lens to photograph a 60x100mm scene!
But also remember that the lens will effectively be a 40% longer lens. So a 150 will be 210. And a 210 will be a 300.
So for head shots, you don't need that extreme telephoto 360 lens. Probably better off with a 200-250 tele or even a 150-180 normal.

If you are shooting half-length or full length portraits, you will only need 10-20% belows draw. So a 210 non-telephoto may be just fine. And that will be effectively closer to a 250mm.
