Sadly, Epson seems never to have put their brains into film holders: using several versions of BetterScanning film holders even my long discarded Epson 3200 scanner could make almost-good scans from 35mm and that was decades ago.

I have a V850 and the medium format holders are worse than the ones for my earlier V600. You could remove the ANR glass for less dust. I haven't tried that and just put up with the fact that there's more dust. I remove the spots the first thing after the scan. You only have to do it once...

I don't believe they will without modification, but you can still find new holders for V700, often for cheap. When I got V800 I went for a full set of V700 frames for same reasons. But am looking into betterscanning.
All the V850 holders are better from the standpoint of holding the film flat. The holders have a glass that the film pushes against. I do have a Betterscanning holder for my 6x7's but only tried it with my older V600. Would the 6x7 Betterscanner work on the V850?
I don't have an answer for you, but have disassembled/cleaned the glass of a V700 as well. And surely the rest of the path is dirty too. I disassembled my Coolscan to inspect the mirror a few years ago and was shocked at how filthy the mirror was. Made me want to rescan everything!
I'm using a V700 plus Betterscanning holder and AN glass for scanning 120. Quite happy with the results.
One area of concern with the Epson flatbeds is the periodic cleaning required of the inside of the glass platen. This is presumably due to outgassing of certain materials within the scanner...

I need to try something like that. Bought a v850 this week. The ANR "glass" badly attracts dust and I just can't remove it. I think i'll have to try my old betterscanning holder for BnW because I think i'll loose my mind retouching the scans.
...used V750's of various stripes and they were roughly the same price but without the improved film holders of the v800 series. With the Betterscanning folks AWOL... at least for now, this makes a difference.
As a side note, let me add that Epson's Clearance Center hiccupped on my order...
