Snails can be delicious, but I'd suggest that your first experience should be with the canned mollusks. Shells are available; typically the canned snails are inserted into the shells along with some garlic and butter, then heated gently. Special trays are available for the heating, as are tiny forks for extricating the mollusk from the shells.
IIRC if you wish to prepare your own wild-caught snails they must be fed corn meal to purge their digestive tracts, but consult the internet or a really comprehensive cookbook. Bon Appetit!
