I'd top such a list with EW's Daybook II...that should have been enough by itself, but I have a accumulated a few more, favorites among them being several Avedons.
What photo books have most inspired or instructed you?

For me, Keith Carter's Mojo and Sally Mann's Immediate Family were mind-blowing when I was introduced to them.
I read EW's Daybooks, but feel I need to again (I don't usually grasp everything in the first read-through).
Anthony Burgess advised keeping James Joyce's "Ulysses" at bedside for the rest on one's life, but I've gotten past the rest of my life, having read it four times (once aloud with a group). I treated Daybook II almost that way for a bunch of years, but it's gathered dust for a dozen. Both might be middle-aged-male rites of passage (I passed), have no idea how a woman would respond.
